Lemon Barley Water

When life throws you lemons, MAKE LEMON BARLEY WATER!!

Those of you who follow me will know I am an advocate of natural health care, a believer in the immune system and the ability to activate our inner healing power. I will always seek alternatives to my healthcare, being big pharma drug free. However I became very ill last week with a suspected UTI / kidney infection. Energy levels hugely depleted. The usual go to’s in my homeopathy kit and the good old cranberry and probiotics weren’t cutting it so I ended up on the dreaded antibiotics… a total last resort, I tried my best. It has been many years since I have had an antibiotic so my system went a little bit haywire.

Lemon barley water; apparently one of the best cures for urinary tract infections! It also lowers cholesterol due to the high levels of beta glucan, the soluble fibre, our wee gut microbes love. Easy peasy too!

– Zest & juice of a lemon and a couple of tablespoons of organic honey are the other stellar ingredients

– Lemon is high in vit C & polyphenols, and honey is antibacterial so this is definitely a health drink! It also alkalises the body and aids digestion!

Here is how to make it!

Ingredients

1/3 cup of pearl barley
1 litre of water
*Zest and juice of a lemon
2 tablespoons honey or maple syrup

Method

Simply rinse the barley, then add to a pot with the water and lemon zest, bring to the boil, then simmer gently for 20 to 30 minutes. Strain into a jug, add the lemon juice and honey and stir to dissolve. Taste & add more lemon juice and/or honey if you like. Store in the fridge.

*Always use unwaxed lemons & remove the white pith which can taste bitter.
